They are perfect, crispy and tasty. As I had several guests to serve and much to prepare, I did blanch the beans in advance and refrigerate until ready to reheat them with other ingredients.
Ingredients
500 g green beans 3 c.
tablespoons of olive oil
¼ cup red pepper, chopped 1 tablespoon
teaspoon lemon zest 1 clove garlic
, chopped Salt and pepper
Preparation
Blanch the beans for 3-4 minutes in boiling water, drain and dip in ice water to stop cooking. Drain.
In skillet lightly brown the garlic and peppers in a little olive oil.
Add beans, lemon zest, salt and pepper and cook just to warm.
